Chicken Pulao Recipe

  • Karam - chili powder

  • Pulao masala - pulao spice mix 

  • Curry leaves (now included with thalimpu)

  • Ginger garlic powder 

  • Thalimpu - whole spices for tempering 

Additional Ingredients to Purchase 

  • 1 lb chicken (boneless chicken thighs recommended)

  • Ghee or neutral oil 

  • 2 cups of washed long-grain white rice 

  • 1 medium onion 

  • 4 cloves of garlic (smashed)

  • 1 cup of cilantro & 1 cup of mint (optional)

Instructions

  1. Rinse the rice.

  2. Cut the chicken approximately to 2 in pieces.

  3. Roughly dice the onion into medium-sized pieces. 

  4. Chop the cilantro and mint if using.

  5. Ensure pan has a tightly fitted lid.

  6. Set the pan to medium heat and add 1 to 2 tsp of oil (or ghee). Let the oil heat up and then add the chicken pieces. Immediately add 2 tsp pulao masala, 2 tsp ginger garlic powder, 1.5 tsp salt, and karam (see below for desired spice level).

    Mild - 1 tsp

    Medium - 2-3 tsp

    Spicy - 4 tsp

  7. Mix the chicken to coat it evenly and cover. Cook for 10-15 mins, opening the lid to mix every 3 mins so it doesn’t stick to the bottom. You want the chicken to be 75% cooked. Once done, remove the chicken from the pan.

  8. Turn the heat down to medium and add 2-3 tbsp of oil/ghee into the pan. Next, add the thalimpu packet (if you have a curry leaves packet add here) and fry for one minute (until fragrant). Add the diced onions and cook for three minutes. Add smashed garlic and saute for one minute. If you have cilantro and mint add them with the garlic and saute for an additional minute.

  9. Next, add the washed rice to the pan, then add 1 tsp pulao masala, 1 tsp karam, 2 tsp ginger garlic powder, and 2 tsp salt. Fold till rice is evenly coated and saute for 3 minutes, mixing frequently.

  10. Now add the chicken mixture back into the pan and gently fold it in. Add 4 cups of water, stir and taste the water to ensure it is salty and matches your spice level. Add additional salt or chili powder at this point if needed.

  11. Put the lid on the pan and turn the heat to high, let it boil for 5 mins. Change heat to medium-low and cook covered for 15 mins. Once the time is done, open and check that rice is cooked. 

  12. Remove the pan from heat and let sit covered for a few mins to allow the flavors to settle in. Or eat it immediately, we’re not ones to judge!
